Pulled Pork Sandwiches

This recipe originated in the Newlywed or Close Life Bible Study. Each main dish couple should make the recipe. Sides are suggested below the recipe.

Ingredients:

  • 6 pounds of pork shoulder/butt
  • Two 12 fl oz cans or bottle root beer
  • Two 18 fl oz bottles of your favorite barbecue sauce
  • 10 hamburger buns

Directions:

  1. Place the pork tenderloin in a slow cooker; pour the root beer over the meat. Cover and cook on low until well cooked and the pork shreds easily, 6 to 7 hours. Note: the actual length of time may vary according to individual slow cooker.
  2. Drain well. Then shred pork. **NOTE be sure to leave extra time to shred the pork- it may take longer than you think**
  3. Place pork back in crockpot and stir in barbecue sauce. Serve over hamburger buns.

Side Suggestions:

  • 5- 14oz bags of chips of your choice
  • 30 hamburger buns
  • Dessert and/or fruit

Pasta Salad

Ingredients:

  • 5 chicken breasts
  • 36 ounces of elbow pasta
  • 2 bunches fresh spinach or 1 lb baby spinach
  • 4 cloves garlic, minced OR 2 tsp pre-minced garlic
  • 2- 10 oz packages of cherry or grape tomatoes
  • 2 cups shredded parmesan cheese
  • 1 cup Ken’s Creamy Caesar salad dressing

Directions:

  • Boil, grill, or pan cook 5 chicken breasts, then shred or chop.
  • Cook and drain elbow pasta according to package directions
  • Stir in spinach and minced garlic and cook over low until spinach starts to wilt
  • Add cherry or grape tomatoes (halved if you want), shredded parmesan cheese, and Caesar dressing.
  • Stir together and Chill in refrigerator

Side Suggestions:

  • 3 loaves of French bread
  • 2 pounds salad and 2 bottles of 8oz salad dressings of your choice
  • Dessert and/or fruit

Chicken Tortilla Casserole

This recipe originated in the Newlywed or Close Life Bible Study. Each main dish couple should make the recipe. Sides are suggested below the recipe.

Ingredients:

  • 2 small white onions, minced (or 1 cup frozen diced white onions)
  • 4 cloves of minced garlic (or 2 tablespoons minced garlic from jar)
  • 2 cups chicken broth
  • Two 14.5oz cans of black beans, drained
  • Two 14.5 oz cans of corn, drained
  • Two 14.5 oz cans diced tomatoes, drained
  • 6 large chicken breasts cooked and shredded
  • 1 and ½ teaspoon salt
  • ½ teaspoon pepper
  • 4 cups Mexican shredded cheese
  • 1 bag of tortilla chips

Directions:

  •  Cook chicken then shred.
  • Meanwhile, in a large pot, saute onions with olive oil until tender. Then add minced garlic and cook until fragrant (about 30 seconds)
  • Add vegetables to pot for about 2 minutes. Then add chicken, salt and pepper.
  • Assemble casserole
    1. Chips to cover bottom of baking dish then spread half of chicken mixture on top.
    2. Spread chips to cover the layer of chicken then layer with 2 cups of cheese.
    3. Spread rest of chicken mixture over cheese.
    4. Layer chips on top of chicken and cover with 2 cups of cheese.
  • Bake at 450 about 10 minutes, until cheese is golden brown and casserole in bubbling.

Side Suggestions:

  • 2 pounds salad and 2 bottles of 8oz salad dressings of your choice
  • 3 bags of tortilla chips and 2 large bottles of salsa

Chicken Fajitas

Ingredients:

  • 5 large chicken breasts cut into strips or chunks
  • 3 large onions, chopped OR 2 bags of frozen chopped white onions
  • 3 green bell peppers, chopped
  • 3 red bell peppers, chopped
  • 6 cloves garlic, minced
  • 3 cans diced tomatoes or 4 whole tomatoes, chopped
  • Mild taco seasoning—2 ½ packets

Directions:

  1. Combine all ingredients in slow cooker.
  2. Cook on high 4 hours or low 8 hours.

Side Suggestions:

  • 60-80 tortillas
  • 3 bags of 14 oz tortilla chips
  • 3 bags of 8oz cheddar cheese
  • 2 jars of 16oz sour cream
  • Dessert and/or fruit

Frito Pie

This recipe originated in the Newlywed or Close Life Bible Study. Each main dish couple should make the recipe. Sides are suggested below the recipe.

Ingredients:

  • 2 pounds ground beef
  • 2 packets MILD chili seasoning (McCormick is a good option)
  • 4 regular sized cans of Rotel (you can use mild or original)
  • 4 regular sized cans of ranch style beans
  • Two (14 oz each) bags of Fritos

Directions:

  1. Brown beef in a large pot, drain fat.
  2. Return beef to pot, add chili seasoning and water (amount indicated on the seasoning packet).
  3. Add cans of Rotel and beans.
  4. Simmer 15 minutes. At this point you can store it in the fridge or transfer it to your crockpot if you make it Sunday.

**NOTE: please do not add extra spice as not everyone can tolerate spicy food**

  • Shredded cheese
  • 2 pounds salad and 2 bottles of 8oz salad dressings of your choice
  • Dessert and/or fruit

Easy Lasagna

This recipe originated in the Newlywed or Close Life Bible Study.  Each main dish couple should make the recipe.  Sides are suggested below the recipe.

Ingredients:

  • 2 lbs lean ground beef
  • 64 oz tomato-basil pasta sauce
  • 2 package NO-BOIL lasagna noodles
  • 30 oz container ricotta cheese
  • 4 cups shredded parmesan cheese
  • 4 cups shredded mozzarella cheese

Directions:

  1. Grease 2 9×13 baking dishes
  2. Brown beef in a large skillet until no longer pink; drain. Stir in pasta sauce.
  3. Stir together ricotta and parmesan cheeses.
  4. Spread 1/3 of meat sauce into EACH lightly greased baking pan; layer the meat sauce with 3 noodles in each pan, then half the cheese mixture, top with 1/3 of the mozzarella cheese. Repeat, spreading 1/3 of the meat sauce, then 3 noodles, the rest of the cheese mixture, then 1/3 of the mozzarella cheese. Top with final layer of 3 noodles, meat sauce, then mozzarella cheese.
  5. Cover with foil and bake at 375 for 40 minutes, uncover and bake 10 more minutes.
